Chicken Macaroni Casserole

This is a very easy recipe that even the kids will eat. If you want something that’s simple, and helps you get the most out of the dinners you have every single week, then look no further for this.


1/2 cup chopped onion
3 tablespoons butter or 3 tablespoons margarine, melted
2 (10 3/4 ounce) cans cream of chicken soup
2 cups shredded cheddar cheese, divided
1 cup milk
3 1/2 cups chopped cooked chicken
2 1/2 cups cooked macaroni
1/4 cup Ritz cracker crumbs


First heat up a skillet with medium-high levels of heat, and then sauté the onions inside the butter until the onions get really tender

Put the soup in the container and about 1.5 cups of the cheese, then slowly add in the milk as you stir it, until it gets nice and creamy

Cook the entire mixture on medium heat levels until the cheese melts in the pan, and then add in the macaroni and the chicken, adjusting the taste and using the salt and pepper to properly season all of this.

Take the mixture and put it in a casserole dish that’s about 2.5 quarts, and then add the bread cracker crumbs over this as well

Bake this in an oven that preheated for around 30 minutes until everything’s properly heated u all the way through

Top this with the last half cup of cheese and then bake this mixture for about five more minutes until there’s a nice, melted mixture of cheese over the top of this one.


How can I make this something the kids will eat?

This is one that kids will truly love! It’s got macaroni and cheese, so you’re going to have them on board. Most kids love it for this alone.

If you do have a picky kid though that hates vegetables, you can typically sneak in some veggies such as green beans, peas, and carrots in this, mixed with the chicken, and they may not even know the difference.

What’s the best soup to use with this?

The type of soup is to your digression, but cream of chicken, cream of celery, or cream of mushroom soup are the best kinds to use with this.

That’s because they offer a savory creaminess that you won’t get with any other soups, and you want something nice and thick, offering a ton of flavors, and really make it easy for you to give the soup that kick that you’re going for, and something that you will love as well.

Can I use specific Chicken for this?

Some people like to use chicken that they have in the freezer for this, but another cool thing about this, is that if you have chicken left over, you can throw it in there as a way to cook it and have something that’s simple and already neatly heated up.

Another option, if you’re looking to make it really easy, is to get some rotisserie chicken from the grocery store, and then toss that in there. It’s a good way to get the chicken that you need for this, and also is a lot simpler than cooking chicken for this, especially if you don’t want to spend a ton of time making it.
